Pat & Gina's Patty Melt

Ingredients
- 12 ounces ground beef (preferably chuck)
- Kosher salt and freshly ground black pepper
- 2 tablespoons olive oil, divided
- 1 medium yellow onion, thinly sliced into half moons
- Small pinch red pepper flakes
- 1 tablespoon chopped fresh parsley leaves
- 4 slices rye bread
- 4 slices Swiss cheese
- 4 tablespoons butter, at room temperature
- Mustard, for serving
- Pickles, for serving
Preparation
Step 1
Generously season the beef with salt and pepper and form into 2 (1/2-inch thick) oval patties. Cook's Note: You want your patties thin and roughly the same size of the rye bread.
Set aside, or place in the refrigerator while you cook the onions.
Add 1 tablespoon olive oil into a large nonstick skillet over medium-high heat. Once oil is hot, add onion and saute until browned, about 8 minutes.
Season the onions with red pepper flakes, salt, pepper, and chopped parsley. Remove onions from the skillet to a bowl and reserve.
Add the remaining tablespoon oil to the hot skillet. Once hot, add the burgers and cook for 3 to 4 minutes until very browned on one side. Flip and continue cooking the other side for another 3 minutes. Remove from pan.
Preheat a grill pan to medium-high heat.
Assemble the patty melts:
Top 2 pieces rye bread each with a slice of cheese, onions, the burger patty, a second slice of cheese, and a final piece of bread.
Butter both the top and bottom of the sandwich.
Grill each sandwich until golden and the cheese melts, about 3 to4 minutes on each side.
Serve hot with mustard and a side of pickles.
Cook's Note: Ground chuck is cut from the shoulder, ranges from 15 to 20 percent fat, and has a rich flavor that is tender and moist. This is best choice for burgers.

We loved the patty melts! My husband and I made these for date night together! It was delicious on the rye bread which we grilled as directed by the show! To go with the onions, I cooked up some chopped bacon. I used turkey bacon to try to cut down on calories, but will only use regular bacon next time! Overall, great!
We loved these patty melts! The only thing I did different was I used sourdough bread instead of Rye. Next time I will add more onions! It is a keeper.
My son home from college for the summer watched this episode with me and helped prepare. He grinned like the Cheshire cat when he took a bite. My husband did the same when tasting the potatoes. Love the show and the chemistry of the Neelys.
This was a delicious sandwich. Followed recipe exactly except used a panini press instead of a grill pan. Sauteed onions low and slow whch brought out the sweetness. Love the hit of crushed red pepper and the parsley. Very Nice.
So simple and just plain good! I used Texas toast and just seasoned my onions with salt and pepper. I also added garlic powder to season my ground chuck. Thanks! This will be come a regular in my kitchen!

Loved the Patty Melts. I Did take advantage of the store hamburger patties and served with Thousand Island Dressing. My Husband loved these.
This was the first recipe I tried from the Neelys and it was delicious. Easy and very tasty. I am so impressed with this show. Love the chemistry between Gina and Pat and this is the first of many recipes I've tried. I love listening to Pat and Gina's family stories and their dedication to tradition. This was delicious & easy! pretty quick too! though, including prep I would add about 10 minutes onto the time it takes to prepare this meal. At any rate, my guys loved it and so did I. oh, and did I mention it's a super cheap meal to make? It is! I also used sourdough since my man doesn't like rye (silly guy. Will be writing this one down for my recipe box and using frequently.

My husband and I watched the show on Sunday morning and said to ourselves, "we could do that"! That evening my husband prepared the hamburger patties and barbequed them as I prepared the onion mixture and butter the only bread we had - sourdough, but once we threw them together, OMG, the best patty melts we ever ate! We can't wait to empress our friends!
I make patty melts often but I decided to make sure I bought chuck beef and I added the peppers and parsley to the onions and I used the swiss, I normally go with jack, but it doesn't really matter, it's all good, and as exspected it was really good and easy,and I always use rye bread, yummy
Just watched the show and it was lunch time so my daughter and I thought why not try it! We had to do some subs because we didn't have everything on hand so instead of the rye we used white Texas Toast and instead of swiss we had sliced cheddar so that is what we went with and it was delicious! Followed everything else in the recipe to the letter and it worked wonderfully!
