Ingredients
- 1 lb. med. shrimp
- 1/2 c. olive oil
- Tsp. Dijon mustard
- 1 clove garlic, crushed
- 1 tbsp. chopped parsley
- 1 tbsp. soy sauce
- 1 lemon (juice of)
- 8 wooden skewers
Preparation
Step 1
Clean and devein shrimp. Blend together oil, mustard, and soy sauce. Add parsley, garlic, juice of 1/2 of the lemon (save other half of lemon for later use).
Marinate shrimp for 1 hour in above mixture, covered in refrigerator.
Place 6 shrimp on each skewer (piercing each shrimp twice). Place on foil or cookie sheet in broiler. Broil 2 minutes on each side. Do not overcook. Eat immediately with a squeeze of lemon. 4 to 6 servings.
