Ingredients
- 1 15 ounce can black beans, rinsed & drained
- 1 14 ounce can beef broth
- 1 3/4 cups water
- 12 ounces cooked, lean boneless pork, cut into bite-sized pieces
- 3 sweet plantains, peeled and cubed
- 1/2 of a 16 ounce package (2 cups) frozen sweet pepper & onion stir-fry vegetables
- 1 cup chopped tomatoes (2 medium)
- 1 tbsp. grated fresh ginger
- 1 tsp. ground cumin
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 3 cups hot cooked rice

Step 1
1-In a 4 quart Dutch oven combine beans, broth and the water. Bring to boiling. Stir in meat, plantains, frozen veggies, tomatoes, ginger, cumin, salt & pepper. Simmer, covered, for 10 minutes or until plantains are tender.
2-To serve, dive rice among soup bowls. Top with meat mixture.
