Ingredients

  • 1 15 ounce can black beans, rinsed & drained
  • 1 14 ounce can beef broth
  • 1 3/4 cups water
  • 12 ounces cooked, lean boneless pork, cut into bite-sized pieces
  • 3 sweet plantains, peeled and cubed
  • 1/2 of a 16 ounce package (2 cups) frozen sweet pepper & onion stir-fry vegetables
  • 1 cup chopped tomatoes (2 medium)
  • 1 tbsp. grated fresh ginger
  • 1 tsp. ground cumin
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 3 cups hot cooked rice

Preparation

Step 1

1-In a 4 quart Dutch oven combine beans, broth and the water. Bring to boiling. Stir in meat, plantains, frozen veggies, tomatoes, ginger, cumin, salt & pepper. Simmer, covered, for 10 minutes or until plantains are tender.

2-To serve, dive rice among soup bowls. Top with meat mixture.
