Horseradish Potatoes

“Grandma said that Horseradish Potatoes were the comfort food she craved.”

Ingredients

  • 8 medium russet potatoes, peeled, coarsely chopped
  • 5 tablespoons butter
  • 1 teaspoon salt
  • 1/4 cup milk
  • 3/4 cup sour cream
  • 3 tablespoons prepared non-creamy horseradish

Preparation

Step 1

Combine potatoes and enough water to cover in a large saucepan. Cook over medium-high heat until very tender, about 20 to 25 minutes; drain.


Combine potatoes, butter and salt in a large bowl. Mash potato mixture, adding enough milk to make of the desired consistency.


Add sour cream and horseradish to the potato mixture and mix well.


Beat the potato mixture with an electric mixer set at medium speed until light and fluffy. Spoon into a serving bowl. Serve immediately.

Grandma's Secret Trick:

Since most children love mashed potatoes, Grandma used the potatoes to encourage the children to eat vegetables they might not otherwise have enjoyed. She sometimes boiled a chopped, peeled parsnip, carrot or turnip with the potatoes, then mashed it along with the potatoes. Another favorite was "birds' nests." Grandma mounded mashed potatoes on the plate, made a well in them, and spooned in cooked green peas.
