Ingredients
- 1 3/4 cups flour
- 2 tsp. baking powder
- 1 tbsp. sugar
- 1 tsp. salt
- 2 tbsp. shortening
- 2/3 cup milk
- 2 cups hot salad oil
- Honey
- Cinnamon sugar
Preparation
Step 1
Combine flour, baking powder, sugar, and salt in a large mixing bowl. Cut in shortening with pastry blender or fork until mixture resembles cornmeal. Add milk, mixing just until dough holds together in a ball.
Turn out onto a lightly floured surface; knead gently, about 1 minute, until smooth. Cover dough, and let rest for 1 hour.
Roll into a 12x15 inch rectangle with a floured rolling pin; dough shourld be 1/16 ro 1/8 inch thick. Cut into 3 inch squares or 2x3 inch oblongs.
Heat oil in a saucepan to 370 to 380. Drop a few pieces of dough at a time into the oil, turning at once so they will puff evenly. Turn back over, and brown both sides. Drain on paper towels.
Serve hot with honey and cinnamon sugar.
Yield: about 20 sopaipillas
