Flaky Potato Pie

“Leave it to Grandma to make a tasty supper with potatoes, onion and pie dough.”

Ingredients

  • 4 medium Idaho potatoes
  • 1 (15-ounce) package refrigerated pie pastries, at room temperature
  • 1 medium onion, cut into 1/8-inch slices, separated into rings
  • 1 teaspoon chopped fresh chives
  • 1/2 teaspoon salt
  • 1/8 teaspoon white pepper
  • 1 cup whipping cream

Preparation

Step 1

Preheat the oven to 350ºF.


Scrub the potatoes and cut into 1/8-inch-thick slices.


Fit one pie pastry in a 9-inch pie plate. Layer potatoes, onion and chives in prepared pie plate. Sprinkle with salt and white pepper. Pour whipping cream over potatoes.


Top pie with the remaining pie pastry, crimping edges.


Cut leaf-shaped slits in top of pastry. Bake pie for 1 hour. Serve immediately.

Grandma's Secret Trick:

Grandma usually put the onion into the pie uncooked, but my mother preferred the carmelized flavor of sautéed onion. So occasionally Grandma sliced and sautéed the onion in a little vegetable oil until it was tender and golden before layering it with the potatoes.
