Ingredients
- 2 TBSP. finely grated ginger
- 1/2 cup mayo
- 1 TBSP. fresh lime juice
- 1 tsp. finely grated lime peel
- 2 cups cooked diced chicken from store-bought rotisserie chicken
- 1 1/2 lbs. large mangoes, peeled, pitted, cut into 1/2" cubes (about 2 cups)
- 1 1/4 lbs. kiwis, peeled, cut into 1/2" cubes (about 2 cups), divided
- 1 TBSP. sliced fresh mint plus sprigs( for garnish)
- 6 cups romaine lettuce, chopped
- 1/4 cup roasted salted cashews, halved
- Salt and freshly ground pepper.

Step 1
Place grated ginger in small strainer set over bowl. Press on solids to extract 4 tsps. ginger juice; discard solids in strainer. Stir mayo, ginger juice, lime juice, and lime peel n medium bowl Add chicken, mango cubes, 1 1/2 cups kiwi cubes, and sliced mint; toss to coat. Season with salt and freshly ground pepper. Divide lettuce among 4 bowls; mound chicken atop lettuce. Scatter cashews and remaining kiwi cubes over; garnish with mint sprigs.
