Potato Soup (Mom)

Ingredients

  • ¼ cup margarine
  • ½ cup onion
  • 3 – 4 meduim potatoes, peeled and cubed
  • 1 tsp. salt
  • 1 tsp. chicken base to taste
  • 2 cups milk
  • 4 cups water
  • ¼ cup flour
  • ½ a can ham, chopped (or whatever ham you have)

Preparation

Step 1

In large dutch oven, melt margarine, add onions. Cook until soft. Add water, potatoes and ham. Simmer 15 – 30 minutes until potatoes are soft. Combine milk and flour in a jar and shake well. Stir into soup. Heat and stir until thickened.
NOTE: Instead of ¼ cup margarine, I use 1 ½ tbsp. onion flakes and 1 tbsp. butter.
