Chocolate in My Peanut Butter Bars

They are so easy to make up in a few minutes and can be cut and packed for a special treat in their lunch. Plus a little chocolate adds a touch of love.

Ingredients
- 1/2 cup butter, room temperature
- 1 cup sugar
- 1/2 cup brown sugar (I used dark brown)
- 2 eggs, room temperature
- 1/2 cup creamy peanut butter
- 1 teaspoon Mexican vanilla
- 1 1/4 cups all-purpose flour
- 2 cups milk chocolate chips, divided
Preparation
Step 1
Preheat oven to 350°. Spray 9x13” pan with cooking spray, set aside.
In the bowl of the stand mixer or a large mixing bowl, combine butter and sugars. Mix until butter is completely incorporated.
Add the eggs, one at a time, mixing well after each addition.
Add peanut butter and vanilla, mix until smooth and creamy.
Add flour to combine.
Add 1 cup chocolate chips and mix briefly until combined.
Pour mixture into the prepared pan. Spread evenly in the pan.
Sprinkle the remaining 1 cup chocolate chips evenly over top and lightly press into the cookie batter.
Bake for 25-30 minutes at 350°, or until edges are turning brown.
Remove from oven and let cool completely on a rack. Cut into bars, and store in air tight container ready to pack up for lunch.
