Potato Snowball Poppers

  • 20 baby white potatoes
  • salt and white pepper
  • 3/4 c sour cream
  • 3 T horseradish



Step 1

Preheat to 350. Cut a small sliver of potato so that it will stand flat.
Place the potatoes in med pot, add enough water to cover by one inch and adda dash of salt. Bring to boil, cook till tender about 10 mins. Drain and let cool.

Using a melon baller, hollow out eash potato, reserving flesh in med bowl. Add sour cream and horseradish to the bowl.. Mash w. masher or potato ricer.

Fill potatoes with mixture. Place on baking sheet for about 15 minutes.
