Roasted Butternut Squash and Sage Pizza
- 1 Medium butternut squash
- 1 T olive oil
- 1/2 t dried sage
- spinach or swiss chard
- shredded fontina cheese
- shredded mozzarella cheese
Peel, seed and cube a medium butternut squash. Toss cubes with olive oil, sprinkle with sage, and roast at 400 degree for about 25 minutes or until tender.
Season the roasted squash with salt and pepper and layer on pizza dough brushed with olive oil. Top with spinach or swiss chard and shredded fontina and mozzarella cheeses. Bake on a cookie sheet or pizza stone at 450 degree for about 5 minutes.
