Ingredients
- 1/2 C Margarine
- 1 C Sugar (save 1/3 C for Egg Whites)
- 3 Ripe Bananas
- 2 Eggs
- 2 1/2 C Flour
- 1 t Baking Powder
- 1 t Baking Soda
- 1/2 t Salt
- 1/2 C Water
- 1 t Vanilla
- 1 t Banana Extract

Preparation
Step 1
Separate the eggs & beat the whites until they form soft peaks. Add the 1/3 C sugar. Set aside.
Mix the rest of the ingredients & beat them well. Add the water slowly. When fully mixed fold into the beaten egg whites.
Makes 4-6 small loaves. Bake @ 350* for 45-60 minutes or when a knife comes out clean.
