Ingredients
- 8 oz self-rising flour
- pinch of salt
- 4 oz mixed butter and lard
- 3 oz caster sugar
- 3 oz currants
- 1/2 t mixed spice
- 1 t honey
- 1 med egg, beaten
Preparation
Step 1
In a bowl rub the lard into the flour until the mixture resembles breadcrumbs.
Stir in sugar, currants, mixed spice and honey. Add the beaten egg and mix to form a firm dough.
On a floured board, roll or pat out the mixture until about 1/2 in thick.
Cut into 2 1/2 in discs and griddle over medium heat until golden brown on both sides. A heavy frying pan works well but take care not to let the sugar burn.
Dust the Welsh cakes with caster sugar and eat immediately or store in an airtight bin.
