Southwest Pulled Chicken (Crock Pot)

Ingredients

  • Makes 12 servings
  • 5 lb boneless, skinless chicken breast
  • 2 onions, sliced into thin strips 1” long
  • 3 c chicken broth
  • 1/4 c celery, diced
  • 1-1/2 tablespoons garlic powder
  • 2 teaspoons salt
  • 2 teaspoons Liquid Smoke
  • 2 tablespoons parsley
  • 1 jalapeno, minced
  • 3 tablespoons lime juice
  • 3 tablespoons prepared, yellow mustard
  • 3 tablespoons paprika
  • 3 tablespoons taco seasoning
  • 1 tablespoon onion powder
  • 1 teaspoon cumin
  • 1 teaspoon cayenne
  • 1 teaspoon white pepper
  • 1/2 1/2 teaspoon cinnamon
  • 1/2 teaspoon cocoa powder
  • 1 teaspoon chili powder

Preparation

Step 1

Place all ingredients in a 5 qt slow cooker. Cook on low heat for 5 hours, until chicken is cooked through.

Remove chicken breast pieces to a plate and shred the meat with two forks. Return meat to slow cooker and cook on high for 2 hours. (If the mixture is too liquidy, leave the lid off for a portion of this cooking time.)

Serve with chips as nachos or load into a bun for a tasty slider.
