Bisquick Taco Casserole

Ingredients

  • 2 lb. ground round, drained
  • 1/4 cup taco sauce (I use Taco Bell)
  • 1/4 teaspoon ancho chili pepper
  • 1/4 teaspoon chili powder,
  • 1 teaspoon taco seasoning, divided into 2 1/2 teaspoons
  • 1 cup sour cream
  • 2/3 cup light mayonnaise (can use regular mayo)or re
  • 1 cup grated Cheddar cheese, may use more
  • 1/2 medium onion, diced
  • 2 cups Bisquick
  • 1/2 cup cold water
  • 3-4 medium tomatoes, sliced thin or 14 ounce can diced tomatoes, drained
  • 1 cup green pepper, diced
  • Paprika

Preparation

Step 1

Preheat oven to 375. Grease a 9x13 baking dish including 1/2 inch up the sides.
Brown beef, salt and pepper and drain. Stir in taco sauce, ancho chili pepper and chili powder.
In a separate bowl, mix the sour cream, mayonnaise, cheese, onion and 1/2 the taco seasoning. Set aside.
Mix Bisquick,remaining taco seasoning and water into a soft dough. Spread into greased baking dish, pressing 1/2 inch up the sides. Layer beef, tomatoes and green pepper. Spoon cream mixture on top. Sprinkle with paprika.
Bake at 375 degrees for 35-40 minutes, until edges of dough are light brown.
