Mascarpone Filling

Great on waffles with a tart fruit or berry syrup. Also as a spread on a fruit tart "pizza". Many other uses I'm sure!

Ingredients
- 8 oz. mascarpone cheese
- 3 oz. heavy whipping cream
- Zest of one lemon
- Powdered sugar to taste (1/4 to 1/2 cup) NOTE: I only used a couple tablespoons
Preparation
Step 1
Whisk the heavy cream in a medium-sized bowl until it begins to form soft peaks. In another medium-sized bowl, mix the mascarpone and lemon zest. Sweeten with the powdered sugar (be careful not to oversweeten). Fold in in the whipped cream to the cheese mixture in three parts.
Once all the whipped cream is incorporated, taste and add more powdered sugar until desired sweetness is achieved. Can be refrigerated overnight.
