Drive-In Cheese Fries

“Grandma says she created this recipe because Grandpa went to the town's drive-in nearly every day for their fries.”

Ingredients

  • 1 (16-ounce) package frozen French fries
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 cup milk
  • 1 cup shredded sharp Cheddar cheese, divided
  • 1 tablespoon chopped pimientos
  • 1 tablespoon chopped jalapeños

Preparation

Step 1

Preheat the oven to 400ºF.


Arrange French fries in a single layer on a baking sheet. Bake the fries for 8 to 10 minutes. Arrange in 4 individual au gratin baking dishes.


Melt butter in a small saucepan over medium-high heat. Add flour, salt and black pepper and stir until smooth. Stir in the milk. Cook, stirring continually, until thickened, about 2 minutes.

Add 1/2 cup Cheddar to sauce. Cook, stirring continually, until Cheddar is melted, about 2 minutes. Stir in pimientos and jalapeños.


Pour sauce evenly over French fries. Sprinkle with the remaining Cheddar. Bake until the cheese is melted, about 8 to 10 minutes.
