Chocolate Cupcakes

If you make into a cake it becomes a dense delicious gourmet cake. You will need to double recipe to make a higher cake as they do not rise like a conventional cake.

Ingredients

  • 1/2 Cup Cocoa
  • 1 Cup boiling water
  • 1 1/3 Flour
  • 2 tsp baking Powder
  • 1/2 tsp salt
  • 1/2 cup butter @ room temperature
  • 1 cup white sugar
  • 2 Eggs
  • 2 tsp vanilla

Preparation

Step 1

In a small bowl stir until smooth hot water and the Cocoa. Let cool and set aside. (I have used flavoured coffee in past)

Whisk dry ingredients together

In mixer beat butter & sugar until Fluffy, add eggs one at a time. Beat in Vanilla.

Add flour in batches and then add cooled cocoa mixture

Bake 375 for 16-20 minutes. Makes 12 Large cupcake (they do not rise much but they are delicious)
