Chicken - Cutlets [Bk] 'Lemon-Herbed'

Ingredients

  • 1/2 cup plain dry breadcrumbs
  • Lemon Zest from 2 Lemons
  • 1/2 tsp. dried thyme, crushed
  • 1/2 tsp. salt
  • Juice from 2 Lemons

Preparation

Step 1

1.) Combine all breading ingredients.
2.) Place lemon juice in Med. small bowl.
3.) Preheat oven to 450F, arrange racks so that air will circulate between the pans.
4.) Lightly oil sheet pans or use non-stick sheet pans.
5.) Remove chicken tenders from breats, rinse chicken but do not pat dry.
5.) Dip breast in Lemon juice and then breading & place on sheet pan(s).
6.) Bake in preheated 450F oven for 20 mins.
7.) Turn chicken over and bake and additional 5 to 7 minutes or until the internal temperature reaches 170F.
8.) Cool in pans for 30 mins.
9.) Place chicken in single layer in gallon-sized bags, divide into 3 equal portions.
