Ingredients
- 2 T Dijon mustard
- 1 T honey
- 4 salmon steaks about 1" thick totaling about 1 1/4 lbs
- 1/2 T dry tarragon
- 1 small tomato thinly sliced
- 4 t nonpareil capers
- 1/4 C dry white wine
- 1/4 C water

Preparation
Step 1
Heat oven to 400oF. Place salmon steaks in a baking pan skin side down. In a small bowl, combine the mustard and honey. Spread the mixture on top of the salmon steaks and sprinkle with tarragon. Top each steak with tomato slices and scatter capers. Combine wine and water in a measuring cup and pour into the pan around the fish. Bake for 15 minutes or until the salmon is done.
