Lemon Pie Filling

Ingredients

  • Pie Filling:
  • Mix together:
  • 1/2 C cold water
  • 5 T cornstarch
  • Combine and bring to boil, then add to above mixture.
  • 1 1/2 C hot water and 1 1/4 C sugar
  • Cook until thick
  • Add and cook a few minutes:
  • 3 egg yolks, beaten
  • Add:
  • juice and rind of 1 lemon and 1 T butter. Cool.
  • Meringue:
  • 3 egg whites
  • 1/4 C sugar

Preparation

Step 1

Pour pie filling into cooked pie crust.

Beat egg white and sugar til mixture stands in peaks. Pour onto pie filling and place into 425 degree oven until browned.
