Dilled Potatoes

Ingredients

  • 1 cup sour cream
  • 1 Tablespoon lemon juice
  • 1/2 teaspoon black pepper
  • 2 lbs baby red potatoes, scrubbed and halved
  • 2 Tablespoons chopped fresh dill or 1 tsp. dried dill
  • 3 Tablespoons olive oil
  • 3/4 teaspoon salt

Preparation

Step 1

Place the potatoes in a large saucepan and add enough water to cover. Bring to a boil. Reduce heat. Cover and simmer until tender when pierced with a fork, 10–15 minutes. Drain and pour into a large bowl. Keep warm.


Meanwhile, place the sour cream, oil, dill, lemon juice, salt and pepper in a blender container. Cover and blend until smooth.


Pour the sauce over the potatoes. Toss until the potatoes are coated well. Transfer to a serving bowl and serve immediately.

Grandma's Secret Tip:

For a flavor twist, reduce the salt to 1/4 tsp. and toss 1/4 cup crumbled bacon with the dressing and potatoes in Step 3.
