Ingredients
- 4 bnls chicken breasts
- 1 T flour
- 3 T butter, separated
- 1 t salt
- 1/2 t pepper
- 2 T lime juice
- 2 t dry southwest seasoning
- 2 t minced garlic
- 1/4 c cilantro
- 1/4 c tequila
- 1 c chicken broth
Preparation
Step 1
Coat chicken w/flour. Melt 1 T butter, add chicken, cook until browned. Sprinkle with salt & pepper. Add 2 t seasoning, garlic; cook until garlic is golden. Add tequila; stir 1 min. Add broth and lime juice. Bring to boil; cover; cook 12-15 mins. Transfer chicken to platter. Bring sauce to boil; until thick (7 mins). Stir in 2 T butter and chopped cilantro. Pour over chicken. Serve with rice.
