Chicken Salsa Verde Bake

Ingredients

  • 2 T vegetable oil
  • 2 1/4 lb skinles, boneless chicken breast
  • 2 1/4 lb skinles, boneless chicken breast
  • 15 oz. can kidney beans, rinsed & drain
  • 1 onion, finely chopped
  • 1 c sour cream
  • 3 c crushed tortilla chips
  • 8 oz. bag shredded mexican cheese

Preparation

Step 1

Preheat oven to 375 deg. Heat oil, add chicken , cook 10-12 mins. Let cool; then shred meat into bowl. Stir in salsa, beans, onion & sour cream. Grease 9x13 baking dish, scatter 1 c tortilla chips on bottom; top with half chicken mix & half cheese. Repeat & cover with remaining chips. Bake until cheese is bubbly, 30 mins.
