Chocolatey Pumpkin Bread

  • 4 c. all-purpose flour
  • 4 tsp. baking powder
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1 3/4 c. sugar
  • 2 1/2 tsp. cinnamon
  • 1 1/2 tsp. ground cloves
  • 1 tsp. nutmeg
  • 3 eggs, beaten
  • 28-oz. can pumpkin
  • 2 tsp. vanilla
  • 1 c. oil
  • 1 c. milk
  • 1 c. semi-sweet chocolate chips
  • 1 1/2 c. walnut pieces, toasted

Preparation

Step 1

In a large bowl, sift together flour, baking powder, baking soda, salt, sugar, cinnamon, cloves and nutmeg. In a separate bowl, whisk together eggs, pumpkin, vanilla, oil and milk. Pour egg mixture into flour mixture; sitr just to moisten. Fold in chocolate chips and walnuts. Divide equally among 3 greased and floured 9x5 loaf pans. Bake at 350 degrees for 65 minutes, or until a toothpick inserted into the center comes out clean. Makes 3 loaves.

To toast walnuts, place them on a lightly oiled baking sheet and bake at 350 degrees for 7-8 minutes. Stir once during baking time; set aside to cool before adding to recipe.
