Ingredients
- 3/4 lb tomatillos
- 1/2 teas salt
- 1/2 cup hickory wood chips
- 1/2 teas dried oregano
- 2 cups halved cherry tomatoes
- 1/4 teas fresh ground blk pepper
- 1/4 cup chopped fresh cilantro
- 1 jalepeno pepper, seeded
- 2 tblsp chopped shallots
- 1 tblsp fresh lemon juice
- 1 garlic clove, peeled
Preparation
Step 1
Discard husks and stems from tomatillos, and cut each in half. Set aside. Line a dutch oven with foil,a nd add hickory chips. ehat chips, covered, over meidum high heat for 10 minutes or until chips begin to smoke. Arrange tomatillos and tomatoes in a vegetable steamer. Place tomatillo mixture in foil lined pan. Cover and smoke 10 mintues. Remove tomatillo mixture form pan, and cool to room temperature.
Place tomatillo mixture, colantro, and remaining ingredients in a food processor. Process until finely chopped.
