Lentils with Garlic and Tomatoes

Ingredients

  • 1 tsp olive oil
  • 1 clove(s) (medium) garlic clove(s), chopped
  • 1 small uncooked onion(s), chopped
  • 1 rib(s) (medium) uncooked celery, chopped
  • 1 medium fresh tomato(es), chopped
  • 4 cup(s) cooked lentils
  • 2 Tbsp basil, chopped
  • 1 Tbsp balsamic vinegar
  • 1/8 tsp black pepper, or to taste
  • 1/8 tsp table salt, or to taste
  • 1/2 cup(s) canned chicken broth

Preparation

Step 1

In a large skillet heat oil. Add garlic, onion and celery; cook until tender.

Add tomatoes, lentils and broth; bring to boil then simmer, covered, 5 minutes.

Stir in basil and vinegar. Simmer 5 minutes. Season with salt and pepper. Yields about 3/4 cup per serving.
