Chicken and Dumplings !!!

Ingredients

  • DUMPLINGS:
  • 4-5 lb chicken
  • 6 c boiling salted water
  • 1/2 t poultry seasoning
  • 2 thinly sliced carrots
  • 1 chopped celery stalks
  • 8 sml potatoes
  • 9 sml onions
  • 2 T cornstarch
  • parlsey
  • 1 c flour
  • 1 egg
  • 1/2 c sour cream
  • 1/2 c chicken broth

Preparation

Step 1

Cut chicken into joints and stew for 1 hour with poultry seasoning, half the carrots, celery and one onion. Remove chicken, strain stock, discard vegetables. Add water to make 6 c. Add remaining vegetables and boil until vegs are soft. . Mix dumpling ingredients, roll and cut into small squares. Add dumplings and boil for 10 mins. Mix 1/2 c cornstarch with water; stir into broth. Simmer until dumplings are light and puffy.
