Chicken and Asparagus

  • 3 lg boneless, skinless chicken breasts
  • 2 lbs asparagus, 1" pieces
  • 4 T olive oil
  • 1/2 c white wine
  • salt & pepper

Preparation

Step 1

Heat olive oil in large pan. Season chicken with salt & pepper, and brown on both sides, about 4 mins. each side. Pour white wine over chicken and add asparagus. Season with salt & Pepper. Reduce heat to simmer and cover. Cook until chicken juices run clear, and asparagus is tender-crisp, about 20 minutes.
