Ingredients
- 4 ounces cream cheese (the real deal cream cheese none of that light or fat free GARBAGE)
- 2 whole eggs (WHOLE EGGS folks this is a PRIMAL recipe so bring on the fat!)
- a pat butter or coconut oil
- 1/2 tsp cinnamon
- a dash of sea salt
- 1 tbsp flaxseed meal (or almond meal, whatever works)
- 3 packets stevia (or eliminate if you don’t want it included)
Preparation
Step 1
So in a bowl with a mixer beat EGG WHITES until you get some peaks. Set aside and in ANOTHER bowl beat the cream cheese (make sure its room temp not fresh out of the fridge) until smooth. Beat the egg yolks, stevia, cinnamon, salt, and flaxseed meal into the cream cheese. FOLD IN (don’t dump in) the egg whites.
Warm the butter or coconut oil in a pan over medium/low heat. I used the pancaked griddle for this, but a regular old pan works well too. I used about 1/4 cup of the pancake batter for each pancake, and cooked about 2-3 minutes on each side. I burnt one or two, because I have ADD when I cook and I think I was glued to the EBay app on my iPhone… but it was ABOUT 2-3 minutes to golden brown on each side. But watch them. They burn easily. Don’t rush them either…
I served them up with some warmed strawberries. I put some fresh sliced strawberries into a bowl with 1-2 TBSP almond milk and some cinnamon and warmed it up in the microwave so it kinda got like a puree/strawberry sauce.
