Corn with Miso butter, bacon and onions

Ingredients
- 2 medium onions
- grapeseed oil
- salt
- 2 large Tbls white miso paste
- 2 Tbl.unsalted butter
- 5-6 thick slices smoky bacon, cut into 1 inch pieces
- 4 Cups fresh corn kernels
- 1/2 cup Chicken broth
- 1/2 cup sliced scallions

Preparation
Step 1
Thinly slice onions. Heat oil in cast iron pan, add onions and pinch of salt. Heat on high for 3 minutes, then lower heat to medium low for 45 minutes. Remove from pan and set aside. Combine miso and soft butter until creamy. Set aside.
Cook bacon in the cast iron pan until brown, but not quite crisp. Remove to paper towel. Return pan to high heat and add 1 Tbl il then add Corn and saute 4 minutes. Add onions, miso butter, bacon 1/2 cup broth, pinch of salt and balck pepper. Toss until blended. Serve with scallions
