Tuna Patties

Ingredients

  • 4 5-oz. cans chunk light tuna in water, drained
  • 1 4-oz. sleeve saltines (about 40 crackers), crushed
  • 2 large eggs, lightly beaten
  • 1/2 small onion, finely chopped
  • 1 rib celery, finely chopped
  • 2 cloves garlic, minced
  • 1/2 teaspoon pepper
  • 2 tablespoons olive oil

Preparation

Step 1

1. Place a plate in oven; preheat to 200°F. In a large bowl, combine all ingredients except oil. Mix well. Form mixture into 12 1/2-inch-thick patties. Put patties on a second plate.

2. Warm 1 Tbsp. oil in a large skillet over medium-high heat. Working in batches, place patties in skillet in a single layer. Cook until golden brown on both sides, about 6 minutes total, flipping once or twice. Transfer cooked patties to plate in oven. Wipe out skillet and repeat with remaining oil and patties. Serve warm.
