Spicy Chickpea Salad

Ingredients

  • 2 cans chickpeas
  • 1 med. tomato, 1/2 inch dice
  • 1/2 cup diced cucumber (1/2 inch)
  • 1/2 small red onion, finely diced
  • 1/2 jalepeno, seeded and minced
  • 2 Tbs. extra-virgin olive oil
  • 1 Tbs. vegetable oil
  • 2 Tbs. lemon juice
  • 1 tsp. ground cumin
  • 1/4 tsp. cayenne
  • 1 tsp. dried mango powder (amchoor)
  • Salt

Preparation

Step 1

1. In large bowl, combine tomato, cucumber, onion, jalepeno, olive oil, vegetable oil, lemon juice, cumin, cayenne and amchoor. Add chickpeas and season with salt.
2. Serve at room temp. or sl. chilled.
