Salmon with Honey Mustard and Tarragon

Ingredients
- 2 T Dijon style mustard
- 1 T honey
- 4 salmon steaks, about 1" thick totaling about 1 1/4 lbs
- 1/2 T tarragon
- 1 small tomato thinly sliced
- 4 t small capers
- 1/4 C white wine
- 1/4 C water

Preparation
Step 1
Heat oven to 400oF. Place salmon steaks, skin side down, in a glass baking dish. Combine mustard and honey in a small bowl and spread mixture on top of salmon. Sprinkle the salmon with tarragon, top with slices of tomato and scatter 1 t capers on each steak.
Combine wine and water in a measuring cup and pour in baking dish around, but not over, salmon. Bake in hot oven for about 15 minutes, or until done.
