- 2 4-oz boneless, skinless chicken breasts
- 4 oz low fat swiss cheese
- 1 c baby spinach
- 1/2 c jarred roasted red peppers (packed in water)
- 8 oz whole wheat baguette

Step 1
Mist a stove-top grill pan with cooking spray and heat on med-high. Sprinkle 1 pinch of salt and pepper on chicken breasts. Add to pan and cook for 5-6 minutes per side, until cooked through and no longer pink inside; set aside to cool. With a fork, shred chicken into 2" pieces. Arrange chicken, swiss cheese, spinach and red peppers on baguette, split. Wipe off pan and heat on medium. Transfer baguette to pan, set a small, heavy skillet over top and press down; cook for 2-4 minutes, turning once. Cut into 4 pieces.
