Ingredients
- 1-4 pound pork loin roast
- 1 Tblsp. olive oil
- 1 tsp. paprika
- 1 tsp. dried thyme
- 1/2 tsp. ground cinnamon
- 1/8 tsp. ground cloves
- 18 tsp. ground nutmeg
- salt and pepper to taste

Step 1
Rub pork with the oil. Combine spices with 1 teaspoon salt and 1/4 teaspoon black pepper, rub all over pork, refrigerate the coated roast at least 4 or up to 24 hours.
Put in preheated 350 degree F oven in roasting pan after searing all sides in skillet with oil. Roast until internal temp reaches 145 degrees F. This should take approximately 15 minutes per pound but check the internal temp for safety sake.
