BRINING CHICKEN

Ingredients

  • 3/4 cup kosher salt
  • 3/4 cup granulated sugar
  • 1 cup boiling water
  • 1 gallon cold water
  • 1 tablespoon black pepper

Preparation

Step 1

Dissolve salt and sugar in boiling water. Add to cold water. Chill brine completely in refrigerator before adding poultry. 4-12 hours.
