Ingredients

  • 4 cups hot cooked whole wheat Spaghetti pasta
  • 2 teaspoons olive oil
  • 1 teaspoon dried oregano
  • 1 clove garlic, pressed
  • 3 cups diced tomatoes
  • 1/2 cup sliced green onions
  • 1/4 cup chopped parsley, divided
  • 2 tablespoons lemon juice
  • 1 cup crumbled Feta cheese, divided
  • Black pepper

Preparation

Step 1

Heat the oil in a large skillet over medium-high heat; add oregano and garlic; saute for 30 seconds. Add tomatoes, green onions, 2 tablespoons of parsley and lemon juice; cook for 2 minutes or until thoroughly heated. Combine tomato mixture, cooked pasta and 3/4 cup of Feta cheese; toss gently. Top with remaining cheese and parsley and serve with pepper.

SERVING SUGGESTION: A big salad tossed with Easy Balsamic Vinaigrette (see recipe). Add some bread sticks.
