Frozen Fruit Salad

Ingredients

  • 2 fresh peaches
  • 1 cup fresh strawberries
  • 1 cup fresh cherries, pitted
  • 1 (8 ounce) can crushed pineapple
  • 1 1/4 cups plain low-fat yogurt
  • 3/4 cup low-fat cottage cheese
  • 4 tbsp honey
  • 2 tbsp lemon juice
  • 4 tbsp frozen orange juice concentrate, thawed
  • 1/8 tsp salt
  • 1/4 tsp vanilla extract
  • 1/2 cup fresh blueberries

Preparation

Step 1

Poach peaches in boiling water for 1 minute. Peel and cut into thin wedges. Hull strawberries and slice thinly. Cut pitted cherries in half. Drain pineapple well, reserving juice.

In blender combine yogurt, cottage cheese, honey, lemon juice, orange juice concentrate, salt, vanilla and reserved pineapple juice. Puree.

Layer fruits in 2-quart bowl. Pour yogurt mixture over fruits. Freeze until firm. Allow to thaw slightly before serving. Slice in 1-inch wedges. Or freeze until almost frozen, scoop with ice cream scoop and return to freezer until firm.
