Ingredients
- 3-1/2 c pumpkin puree or 2-15oz cans pumpkin
- 1-1/4 c pure maple syrup
- 1/2 c apple juice
- 2 T lemon juice
- 1 t ground ginger
- 1/2 t ground cinnamon
- 1/2 t ground nutmeg
- 1/4 t salt

Step 1
In 5 qt heavy pot combine all ingredients. Bring to a boil; reduce heat. Simmer uncovered for about 25 minutes or until thickened, stirring often. (if mixture spatters reduce heat more)
Ladle hot pumpkin butter into hot sterilized half pint jars leaving 1/2" headspace. Cool for 30 minutes. Seal and label.
Store in refrigerator for up to 1 week or transfer to freezer containers leaving 1/4" headspace and freeze for up to 6 months.
