Step 1

Take 2 red peppers, cut in half, remove stalks and ribs, put in pot of boiling water 2 minutes, remove and run under cold water. Set aside. Then heat 1 small onion chopped and 1 clove garlic until "waxy" and then let cool off. Cut up 5-6 oz or half a ciabatta and toast until golden brown. Take 2 tomatoes and peel them by putting them in boiling water for a couple minutes, then keep under cold running water and carefully peel the skin and then dice them. Then take 5 oz Old Amsterdam cheese and dice it. Mix the ciabatta, tomatoes, cheese, 2 beaten eggs, onion mixture, pepper and 2 tbsp fresh shredded basil leaves. Then stuff the peppers. Sprinkle shredded cheese on top and drizzle olive oil over the peppers. Put the peppers in ovenproof dish and bake them in 350 degree oven for 20 minutes. Serve hot.
