Ingredients

  • 8-lbs apples
  • 4 c apple cider
  • 4 c brown sugar
  • 4 c sugar
  • 4 T ground cinnamon
  • 1 T ground cloves
  • 1 T ground nutmeg
  • 1 t ground cardamom
  • 1/2 c lemon juice

Preparation

Step 1

Wash apples. Cut off stem and blossom end. Do not peel and core. Cut into small pieces.
Add apples and cider to a large stockpot. Cover and simmer until apples are soft. Reserve cooking liquid. Press apples through a food mill or sieve.
Return pulp to stockpot and ad remaining ingredients. Add half the reserved cooking liquid. Cook slowly on medium-low heat 45-60 minutes.
As pulp thickens, stir frequently to prevent sticking. If mixture gets too thick add reserved cooking liquid until you get the desired consistency.
Ladle into sterilized jars leaving 1/4" headspace. Wipe rims. Cap and seal. Process in water bath canner for 10 minutes.
