Sweet & Sour Chicken

Ingredients

  • Chicken
  • 3-4 Chicken breasts, cut into slices or cubes
  • salt
  • 1 C. flour
  • 1/2 C. cornstarch
  • 2 tsp. baking powder
  • 1 tsp. baking soda
  • 1 1/2 C. cold water
  • Vegetable Oil
  • Rub salt into chicken pieces. Mix flour, cornstarch, baking powder, baking soda, and cold water in a medium sized bowl. Set aside. Heat oil*.
  • Sauce
  • 1/2 C. water
  • 4 Tbsp. Cornstarch
  • 4 Tbsp. Rice Vinegar
  • 6 Tbsp. Catsup
  • 1 1/3 C. Sugar

Preparation

Step 1

Place all ingredients in a sauce pan and bring to full boil, stirring constantly until thickened. Use a little less cornstarch for thinner sauce, or dilute with a little water if needed. Keep warm.
Dip chicken pieces into batter and deep fry until brown. Drain on paper towel. Serve with rice and garnish with sesame seeds, tomato, green pepper, pineapple or kiwi slices.

*Note: If you have a deep fryer, use that to heat and cook the chicken. Otherwise, heat oil in a pot to about 350 degrees. If you don't have a thermometer, test the oil by placing a drip of batter into the pot and watching how it cooks. If it cooks too quickly, your oil is too hot.
