Fluffy Pancakes

These pancakes are delicate because they are so light and fluffy, but they are amazing when served with just butter. make sure butter is soft or it will tear pancake.

Ingredients
- 4 Eggs
- 1 c Milk
- 1 t Baking Powder
- 2 T Melted Butter
- 4 T Sugar
- 1 c Flour
- 1/2 t Salt
Preparation
Step 1
Separate eggs. Beat Egg whites until soft peaks are formed, gradually add 2 T sugar beat until Egg whites are stiff. Beater must be very clean. Then beat together remaining ingredients; egg yolks, remaining sugar, milk, flour, baking powder and melted butter. Fold Egg whites and egg yolk mixture together gently. Cook by ladle on cool griddle, turning only once until golden brown. Devour with butter and/or syrup.
May also be used to make Waffles, increase oil and oil waffle iron well…
