Ingredients
- 2/3 c. flour
- 2 tsp. granulated sugar
- 1/2 tsp. salt
- 2/3 c. milk
- 1/3 c. water
- 1 tbsp. melted butter
- 2 eggs
- 1/3 c. butter
- 1 c. packed brown sugar
- 1 tsp. cinnamon
- 6 c. cliced apples
Preparation
Step 1
In a large bowl, stir together flour, sugar and salt. In a small bowl, whisk together milk, water, melted butter and eggs. Pour mixture over dry ingredients all at once, stir until smooth. Heat pan until medium hot. Add 3 tbsp. batter for each crepe, tilting and rotating pan to ensure batter covers entire bottom of pan. Cook for 1 1/2 minutes or until the edges begin to brown. Turn carefully with a non metal spatula or fingertips. Cook for another 30 - 45 seconds. Remove to a plate and repeat with the remaining batter.
Filling:
Melt the butter. Stir in sugar and cinnamon. Add apples and simmer gently until tender. Spread 1/4 - 1/2 c. of hot filling down the center of each warm crepe. Roll and top with a sprinkle of cinnamon.
