TOMATO, BACON and FRESH HERB SAUTE'

Ingredients

  • 1 1/2 ounces pancetta, diced (bacon)
  • 2 cloves garlic, finely chopped
  • 4 cups tomatoes, halved or quartered
  • 3/4 teaspoon salt
  • 1/4 teaspoon sugar
  • 1/8 teaspoon black pepper, or to taste
  • 1/3 cup basil, fresh, chopped
  • 1 tablespoon fresh parsley, finely chopped

Preparation

Step 1

Heat a large nonstick skillet over medium heat. Add pancetta and cook, until crisp, stirring frequently, about 6 minutes. Add garlic; cook, stirring, until fragrant, about 30 seconds to one minute.

Increase heat to medium-high and add tomatoes, salt, sugar and pepper; cook until just beginning to soften, stirring occasionally, about 8 minutes. Remove from heat; stir in basil and parsley.
