Raw Almond-Goji Cacao Chip Cookies

Ingredients
- 1/2 cup almond butter
- 3 tablespoons agave nectar
- 2 tablespoons vanilla flavor or seeds from 2 vanilla beans
- 1/4 teaspoon sea salt
- 1 1/2 cups almond meal
- 1/4 cup goji berries
- 3 tablespoons cacao nibs
Preparation
Step 1
1. Sift together almond butter, agave nectar, vanilla and salt in a mixing bowl.
2. Add the almond meal, goji berries and cacao nibs and mix well.
3. Drop the dough by 1 1/2 tablespoons onto a cookie sheet lined with parchment paper.
4. Use a fork to press the balls into flattened cookies.
5. Serve immediately or freeze for an hour to firm up. The cookies will keep for weeks in the refrigerator or freezer. Thaw for 5 minutes before eating.
