Simply Sauteed Gold Chanterelles

- 2 tablespoons butter
- 1 teaspoon ginger
- 1 pound Gold Chanterelles
- Salt to taste
- Sugar to taste
- Soy sauce to taste
- 1 teaspoon cornstarch mixed with
- 1 tablespoon water
Saute chanterelles in ginger and butter for 5 minutes. Cook down. Season to taste. A nice accompaniment with the mushrooms are fresh ramps.
This recipe yields 3 to 5 appetizer servings.
