Wild Berry Oatmeal Cheesecake Muffins

Ingredients

  • 1 c. old fashioned oats
  • 1 c. buttermilk
  • 1 cream cheese softened
  • 1/4 c. sugar
  • 3 Tbsp. orange zest
  • 1 c. flour
  • 3/4 c. packed brown sugar
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1 egg beaten
  • 1/4 c. butter melted
  • 1 c. fresh or frozen mixed berries

Preparation

Step 1

Heat oven to 350.

Combine oats and buttermilk in small bowl; let stand 10 min.

Beat cream cheese, sugar and zest with mixer until blended; set aside. Mix flour, brown sugar, baking powder, baking soda and salt in large bowl.

Add egg and butter to oats mixture; stir until well blended. Add to dry ingredients; stir just until moistened. Gently stir in berries.

Spoon half the batter evenly into muffin cups (says to use the extra large muffin tins). Top each with scant tablespoonful cream cheese mixture; cover with remaining batter.

Bake 30-35 min or until toothpick inserted in centers comes out clean.
