Ingredients
- 1 1/4 cups unbleached all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon fine salt
- 2 large eggs, at room temperature
- 1/2 teaspoon vanilla extract
- 1/2 cup unsalted butter, at room temperature, plus more for preparing the pan
- 1 cup sugar
- 3 very ripe bananas, peeled, and mashed with a fork (about 1 cup)
- 1/2 cup toasted walnut pieces
Preparation
Step 1
Sift the flour, baking soda, and salt into a medium bowl, set aside. Whisk the eggs and vanilla together in a liquid measuring cup with a spout, set aside. Lightly brush a 9" by 5" by 3" loaf pan with butter. Preheat the oven to 350 degrees F.
In a standing mixer fitted with the paddle attachment or with an electric hand-held mixer, cream the butter and sugar until light and fluffy. Gradually pour the egg mixture into the butter while mixing until incorporated. Add the bananas (the mixture will appear to be curdled, so don't worry), and remove the bowl from the mixer.
With a rubber spatula, mix in the flour mixture until just incorporated. Fold in the nuts and transfer the batter to the prepared pan. Bake for 55 minutes or until a toothpick inserted into the center of the bread comes out clean. Cool the bread in the pan on a wire rack for 5 minutes. Turn the bread out of the pan and let cool completely on the rack. Wrap in plastic wrap. The banana bread is best if served the next day.

This banana nut bread was excellent. I am a pretty good cook when I stay focused on what I am doing. Instructions were precise and easy to follow. Thought I messed up when I tossed in the nuts before the dry mix, but stayed with the rest of the instructions and perfect.
I made this banana bread using some very ripe bananas that I would have thrown out otherwise. It took probably less than 20 minutes to prepare and 55 minutes to turn a cripsy top in my oven. I toasted my whole walnuts halves in my toaster oven and then I crushed them up a bit to get peices. My husband could not even wait for it to cool down after I pulled it out of the oven. The smell intoxicated us and our home smelled amazing. My husband ate almost half the loaf with MILK!! hehe...fabulous!
This banana bread was soooo tasty and delicious. I just started eating bananas after years of disliking the smell, the look and the taste of them. I didnt see what was the fuss about bananas. It was my boyfriend who got me to start trying them. I still didnt like the taste of them but when your hungry and you need a little snack, it is the perfect go-to fruit that satisfies. i wanted to find the perfect banana bread recipe and i've found it. I've never ate it before and i am sooo amazed at how the banana flavor is just shining in the recipe. i added sliced almonds along with the walnuts and I also added cinnamon on top of the batter before baking to give it a little more flavor and it came out wonderful. I am a terrible baker, but I did not mess up this receipt. The end result was the best tasting banana nut bread I have ever eaten. The crust was caramelized and the roasted walnuts were extra tasty. The bread was extremely moist and delicious..

Yup... pretty much what everyone has already said--best banana nut bread I've ever had! It did take a little closer to 1hr 10 mins to bake as a few have mentioned. I absolutely love it and can't wait to use it during the holidays!
I think the recipe is GREAT however, the cooking time needs to be a little longer. I had to bake the bread almost 1 hour and 20 minutes. It looked liked it was done however, the middle was still uncooked.
Absolutely delicious. I made it for father's day with no electric mixer and it still turned out heavenly. Make sure you sift your flour and toast the walnuts, but don't burn! I added an extra banana and made sure not to overcook - I think it made it extra moist and sweet. In the future I will take some of the sugar out because of the extra banana.
I make this banana bread often. Sweet, tasty, moist, and easy to make. Usually needs an extra 5 or 10 minutes in the oven.
My husband said it was the best thing I've ever baked and he NEVER compliments me on my cooking. He asked me to make it again, so I will. I added double walnuts. And this bread tastes best after sitting for over a day.
My boyfriend and I usually don't like any type of nuts in desserts, but this was actually pretty good and easy to make! I tried to make some bread for his family but he refused to give them any because he wanted to eat it all! Definitely a recipe of goodness.

Oh MY LORD this banana bread is awesome! I added about 3 tbsp finely shredded dried coconut and drizzled an orange glaze on top (powdered sugar, fresh orange juice + 1 tbsp orange zest. All I have to say is Wow!
